Long Duration Modes
Fermentation
Create the perfect environment for beneficial bacteria. Use Fermentation to make yogurt, prove doughs, and more. Set temperatures between 37°C and 70°C. Tips:
- Yogurt in the mixing bowl: use 40°C.
- Yogurt in jars using Varoma: place 250 g water in the mixing bowl and heat to 70°C.
- Dough proving: heat water in the mixing bowl to 50–55°C to maintain a stable 26–28°C in the Varoma.
Slow Cook
Gently cook up to 800 g of meat, poultry, firm seafood, or legumes between 60°C and 98°C to preserve nutrients and pack in flavour. Ideal for stews, casseroles, and tougher cuts—results are tender and melt‑in‑the‑mouth. Great for broths, soups, and compotes.
Sous‑vide
Cook vacuum‑sealed meat, fish, vegetables, or even fruit at low, controlled temperatures (typically 40°C–85°C) for up to 12 hours. Sous‑vide delivers extremely tender, juicy results, enhances flavour, and reduces the need for extra salt or seasoning.

Sugar Stages
Achieve perfect caramel without constant stirring. Guided Sugar Stages walk you through precise consistency levels—from soft caramel and fudge to caramel brittle and honeycomb. Available only within Guided Cooking recipes.
